Pimento Olive Food Recipe Patent
Horace Newcomb appreciated the smooth external surface of olives. He was also partial to the convenience and refinement of a pitted olive – desires parted by the disfiguring cavity formed by pitting the flesh.
So, he inserted a folded strip of pimento pepper into the cavity; the fold continued the smooth external surface of the olive and added an enticing dash of red.
In 1914, Horace patented:
“A pitted olive with the cavity mouth closed by a pimento pepper that fits snugly to the walls of the cavity and is retained in position by frictional contact therewith.”
