The magic of sesame seeds:

It seems that, to preserve food naturally, you simply need to add sesame seeds / Tahina. The addition of sesame seeds to peanut butter 🥜 was patented by Sidney Musher in 1927, who claimed that it made the peanut butter last 3 times longer. In 2006, Eli Budman and Marcelo Adatto added an unusually high ratio of Tahina to dried cooked chickpeas and found that it extended the shelf life of the hummus concentrate to 3 months (which anyone who loves hummus knows is exceptional). Their recipe:

  • A powder consisting of cooked, dried and ground chickpeas having a water content <5%; and
  • Crushed sesame seed paste (i.e. Tahina) in a powder to paste ratio of 1 : 0.7-1.2.

When ready to eat, simply add water.
