A wonderful patent story of good intentions 😇 gone wrong 🔥 : In 1936, Allen Hugh set out with praiseworthy intent to make a healthy celery salt. The problem is that celery oil is expensive and turns rancid in the presence of salt. So, Allen settled on adding only an incy wincy touch of celery oil … so small that it was barely perceptible. Forced to enhance the faint taste of celery, Allen absorbed the celery oil into MSG. The final patented formulation:

– 0.1-1% of celery oil;

– 2-6% of MSG; and

– the remainder of salt.

Maybe, it’s sometimes best to leave “bad enough” alone.
